Finding the right knives for the kitchen can be so frustrating. There are so many types and uses that it can get really confusing especially for a new homemaker or a novice cook. Fortunately, there are cutlery sets available that do the job of selecting for you.

Some of my favorite shows are cooking shows.  There is Food Network’s Iron Chef America. My favorites are Mario Batali and Masaharu Morimoto.  And then there’s Gordon Ramsay in Fox’s Hell’s Kitchen.  You kind of hate him for his insulting comments to the contestants. When I watch these shows I pay attention to the gadgets and kitchen implements being used.

Not many people know that when you cut food you affect its flavor.  Depending on how you cut or tear your food you’ll notice a very subtle change in the flavor of your dish.  This is why some chefs choose to tear certain foods with their bare hands.  Things like vegetables, when torn instead of cut, will release more flavor into the dish if cooked for the appropriate amount of time.

On the other hand, there are times when we don’t want the food we’re processing to seep its flavor or character into anything else.  This is true of most meats.  So, the end result of your culinary creations depends largely on the quality (or lack thereof) of your kitchen cutlery sets.  Anyone who’s ever made so much as a sandwich can tell you how critical it is to have top-quality and dependable cutlery at your disposal. Since dull blades require a greater force to achieve a cut dull knives present a much greater cut hazard in the kitchen.  This is why it’s important to check the strength of the blade of your knives.  It’s good to know precisely what the steel can tolerate before it loses its edge.  Personally, I think having a dull knife is worse than not have a knife at all! A slitzer knife is the best option to ensure not having dull knives.

A good set of knives can make all the difference in the kitchen. When purchasing a new set of kitchen knives you need to take careful consideration. First, look for kitchen knives that have an equal balance between the handle and the blade. This makes them more ergonomic so you won’t hurt your wrists.

You also need to find a set of knives that are resistant to corrosion. The best knife sets come with warrantees, sometimes even lifetime warrantees. Personally, I’m partial to Slitzer knives. Other than sharpening every now and then, the Slitzer knives don’t require too much maintenance and still work like a dream.

There’s no single way to carve a turkey.  Most home cooks came by their technique naturally, honed in mature youth after witnessing a host of oldsters demonstrating the art (…some oldsters, like Uncle Bill, held us children spellbound as he carved with flashes of flare & bravado).   For most of us, there may be room to improve (if not the flare, then the carved display).
